Coconut Blackberry Banana Bread (and it’s vegan)

One of my friends decided to go on a juice cleanse over Memorial Day weekend. Weird, because all I could think of was BBQ and beer along with the rest of the United States. None of which I actually had due to lack of invites to the aformentioned- but I guess we all have to visit Loserville sometimes.

Which brings me right to my next thought- something I have been waiting to confess for sometime now…

I had a fling with raw veganism.

There, I ADMITTED it.

Although my fling was little more than a one night stand, sometimes I feel nostalgia for the short lived euphoria it provided. I would switch off flirting with Raw, and then take joy in finding Vegan at the bar later.

Many people have been there, don’t judge me.

Some recipes have remained in my repertoire, nevertheless. Vegan recipes can be absolutely delicious, and I don’t put any ingredients like “egg substitute” in them.

This is my take on vegan banana bread. It is fruity, very moist and not too sweet- like any good breakfast cake should be. That is, unless you should decide to slather a piece in coconut butter, fry it on either side till it’s golden, and serve it with coconut sorbet for dessert…

Coconut Blackberry Banana Bread

1 1/2 cups whole wheat pastry flour

1 teaspoon baking soda

1 teaspoon baking powder

1/4 teaspoon salt

1/2 cup coconut butter, melted

1/2 cup maple syrup

1 heaping cup blackberries

3 ripe bananas

2 tablespoons lemon juice

1 1/2 teaspoons vanilla extract

 

Preheat oven to 350.

-grease a loaf pan with coconut butter.

-mix dry ingredients in a bowl.

-dust blackberries with about a tablespoon of the flour mixture and set aside.

-whisk the coconut butter with the maple syrup.

-coarsely mash the bananas ( I use my hands) and mix in lemon juice.

-add bananas and vanilla to coconut maple mixure.

-mix the dry ingredients with the wet just until they come together and then gently fold in the blackberries.

-pour into prepared loaf pan and bake for about 1 hour- 1 and 15 minutes, or until a knife inserted in the center comes out clean.

OH! I forgot to tell  you…  this bread slathered with peanut butter for breakfast is very smile-on-your-face for the rest of the day.
